Crawfish: Whether boiled with spices or in jambalaya, etouffee or gumbo, crawfish is the swampy essence of Cajun cooking.

Muffuletta: A sandwich of Italian meats and cheeses with olive salad topping. Specially designed muffuletta bread is about ten inches in diameter.

Hurricane: The deliciously potent drink was created during WW II when liquor such as whiskey was in low supply. In order to purchase just one case of these liquors, liquor salesmen forced bar owners to purchase as many as 50 cases of rum, which was plentiful. In an effort to use up the abundance of rum, the Hurricane was developed.

Beignet: It's believed that the Ursuline Nuns of France brought this pastry to New Orleans. Beignets are hand rolled and deep fried then covered with heaping amounts of powdered sugar.
